Cinnamon-Rolled Overnight Oats

Overnight Oatmeal with Cinnamon

It takes just minutes to assemble this healthy no-cook breakfast, and you’ll have meal-prepped grab-and-go breakfasts on hand for the rest of the week. Top these delicious vegan oats—inspired by classic cinnamon bun flavors—with fresh or frozen fruit and your favorite nuts and seeds.

Ingredients

2 cups old-fashioned rolled oats (see Tip) 2 cups unsweetened nondairy milk, such as almond or coconut 6 teaspoons light brown sugar 1 1/2 teaspoon vanilla extract 1 1/4 teaspoon ground cinnamon 1/2 teaspoon salt

Instructions

  1. Pour “milk” into a large container
  2. Submerge the oats completely in the milk
  3. Cover and refrigerate overnight (8 hrs)
  4. In the morning remove the mixture from the refrigerator
  5. Add the brown sugar, vanilla, cinnamon, and salt. Mix
  6. Using a spoon, divide among four 8-ounce jars.
  7. Add nuts, berries, or other toppings.
  8. Serve and eat

Notes

If you have celiac disease or gluten sensitivity, ensure your oats are labeled “gluten-free.”
