Sunflower microgreens, and why a small bag weighs what it does
Of seventeen microgreens measured side by side, this one carried the least water per gram. The same evidence puts it last of six for iron, for magnesium and for flavonoids, and both halves are on this page.
Sunflower is the one people eat and then go quiet for a second. Thick, crisp, faintly nutty, closer to a snap pea than a lettuce. In a USDA trial that measured seventeen microgreen species side by side, sunflower carried the most solid matter per gram of any of them, on the biggest single shoot of the lot. Less water, more plant.
The same evidence puts it last of six for iron, magnesium and flavonoids. That stays on the page, and saying it out loud is what makes the rest believable.
What the research measured
Figures below are from published work on sunflower microgreens themselves, not on microgreens as a category. Every comparison here is against other microgreen species, which is the only comparison the research supports. Nothing published compares this seedling with the mature plant or the seed, and no figure below borrows from either.

Conditions. Source 1 grew the ‘Black oil’ cultivar on inert mats with no micronutrient feed and cut at ten days. Source 2 grew in peat under a quarter-strength nutrient solution and does not name its cultivar, so none is named here. Your own figures will land somewhere else, and the next section explains why that is worth saying out loud.
What this does not show
There is one published human trial on eating microgreens, and it did not use sunflower.
Colorado State ran it in 2025. Twenty-six adults, two cups a day, two weeks, on beet and cabbage, and twenty-four finished. It found people could do it. It found no change in blood pressure, none in artery stiffness, and none in gut microbiome diversity. Everything measured above is what sits in the plant, not what it does in a body, and the same limit runs backwards in time to the old uses of the seed and the oil.
Mineral figures move so far between growing systems that none is sold from this page. Calcium differed by more than three times across two peer-reviewed trials of this crop, zinc by six. Storage has exactly one published study, and it ran on gas-flushed packaging a market grower does not own. The full accounting, row by row, is in the guide.
What your customer will ask
The part you cannot get from a nutrition database. Six questions that come up at a stall or a restaurant door, what you can say, and what you must not. The fifth is particular to this crop, and every sunflower grower hears it weekly.
“Why is it so expensive for such a small thing?”
Weight for weight, sunflower carries more solid matter than any of the seventeen microgreens in the one trial that measured them side by side1. Less of what you are buying is water. The same trial weighed it as the biggest single shoot of the seventeen, and it is still cut at about ten days, by hand, close to where you are standing. What you are paying for is the ten days and the hand.
Anything that measures the price against medicine, supplements, or a health outcome. Price is about labour, not about what the food is supposed to do for somebody.
2“What is it actually good for?”

Never say it treats, prevents, cures, or helps with any condition. That sentence is the line between a food and a drug, and it is the same line in the United States, the United Kingdom and South Africa. No mineral number either. Between two peer-reviewed trials of this crop, calcium moved by more than three times and zinc by six. A figure that moves that far with the growing system is not a fact about your tray.
3“How do I use it? It will just go off in my fridge.”
Built on the one storage trial, and the single temperature that changes the outcome.
A shelf-life number you have not tested on your own product in your own packaging. One storage study exists for this crop3, it ran on gas-flushed film, and it has never been repeated. Borrowing its day count hands your customer somebody else’s packaging and somebody else’s fridge.
4“Is it safe? I read something about sprouts.”

Never say your product cannot be contaminated. Say what you do, not what cannot happen. And do not borrow sprout warnings either. A three-day sprout eaten whole, root and all, is a different product from a shoot cut above the growing medium at ten days.
5“Why is there a shell stuck to some of the leaves? Is it OK to eat?”
Built on what the hull actually is, why sunflower wears it more than any other crop on the table, and the honest answer about eating it.
A promise that no hull ever ships. The hull is the seed coat riding up on the biggest cotyledons in the trade, and some days it wins. Never turn it into a scare either. It is a seed coat, not a contaminant, and the answer for a customer who does not want to chew one is pick it off, not a claim about what it does or does not do inside anybody.
6“Somebody told me these have way more nutrition than the seeds or the grown plant. How much more?”
Built on where multiplier numbers come from, and the one comparison this crop honestly cannot make.
Never repeat a multiplier you have not traced to a table. Nothing published compares sunflower microgreens with the mature plant or the seed, so for this crop every multiplier in circulation is borrowed from a different crop or invented. Old uses of the seed and the oil are not evidence about a ten-day seedling, and nothing you hand a customer may state or imply that this food treats, prevents, eases, or helps with any condition.
