Pineapple Kiwi Kale Cooler

A tropical delight combining the sweetness of pineapple and kiwi with the nutritional powerhouse of kale microgreens. A smoothie, packed with vitamin C and antioxidants, rejuvenates and boosts immunity.

Kale microgreens pack an intense nutritional punch. Compared to the mature kale leaves, it has an exceptional level of vitamin C, vitamin K, lutein, beta-carotene, and antioxidants. Combining kale microgreens with sweet tropical fruits like pineapple and kiwi makes a delicious and nutritious smoothie.

  • Yield: 2 Cups

Ingredients

Units Scale
  • 1 cup diced pineapple
  • 1 kiwi, peeled and sliced
  • 1 cup kale microgreens
  • 1/2 cup coconut water
  • 1 tablespoon lime juice
  • 1/2 cup of ice (optional)

Instructions

  1. Thoroughly wash the microgreens.
  2. Peel and slice the kiwi fruit
  3. Peel and dice the pineapple
  4. Put the fruit and microgreens into the blender
  5. Add the coconut water and lime juice (ice optional)
  6. Blend the mixture for one minute or until smooth.
  7. Pour into glasses over ice, or chilled, and serve immediately.

Notes

Adjust sweetness by adding more fruit or ice if desired.
