Carrot Microgreens Mango Peach Mint Medley

Carrot microgreens contain exceptionally high levels of vitamin C, K, potassium, and antioxidants compared to mature carrots. Blending them with sweet fruits like mango and peach results in an incredibly nutritious smoothie that revitalizes and refreshes.

Ingredients
- 1 cup diced mango
- 1 ripe peach, pitted and sliced
- 1 cup carrot microgreens
- 1/2 cup coconut water
- Fresh mint leaves for garnish
- 1/2 cup of ice (optional)
Instructions
- Thoroughly wash the microgreens, peach, and mango
- Cut, pit, slice the peach vertically
- Peel and pit the mango
- Slice into one-inch chunks
- Put the microgreens, peaches, and mango slices into the blender
- Add the coconut water (ice optional)
- Blend the mixture for one minute or until smooth.
- Pour into glasses over ice or serve chilled
- Garnish with mint leaves.
Notes
Adjust consistency by adding more coconut water or ice if needed
