Lettuce microgreens, and the one trial that grew both

Somebody grew the seedling and the full head in the same soil, on the same farm, in the same winter. The seedling came out ahead on six minerals and behind on three. The same crop sits near the bottom for carotenoids at this stage, and it wilts faster than mustard.

The twenty-second answer

Lettuce is the microgreen for people who do not like microgreens. Mild, faintly sweet, soft enough to vanish into a sandwich, with none of the heat of radish or mustard. It is also the one crop where somebody grew the seedling and the full plant in the same soil on the same farm, and the seedling came out carrying about a quarter of the nitrate.

Measured composition

What the research measured

Figures below are from published work on lettuce microgreens specifically, not on microgreens as a category. Where a comparison with the full-grown plant appears, a study actually made that comparison. Lettuce is one of the few crops where that is possible, because the seedling and the mature crop are the same organ. Both are leaves.

Mean across the same eleven varieties, and the range runs from zero to 43.48. A coefficient of variation of 260 per cent means some trays had none at all. The baby leaf stage of those same plants reached 36.76, and a second laboratory in another country also found lettuce lowest at the seedling stage.

Conditions. The nitrate figure is ‘Grand Rapids TBR’ grown in peat under LED at 300 µmol, cut at eighteen days in Cyprus. Dry matter and carotenoids are the mean of eleven varieties, five commercial and six Valencian landraces, in coconut coir under natural light near Valencia, cut at two weeks. The mature-head comparison is butterhead, L. sativa var. capitata, in soil across three greenhouse fields in northern Portugal through a winter. The shelf-life trial named no cultivar. Saying so is part of the figure.

The evidence base, stated plainly

What this does not show

There is no published human trial on eating lettuce microgreens, and two papers in this corpus could not be opened.

Nobody has fed these to anyone and measured what happened. Everything above is what sits in the plant, not what it does in a body, and the same limit runs backwards to the Egyptian offerings and the seed oil. A seedling cut at two weeks is a different part of the plant at a different stage. Two papers stay unread and therefore unquoted here: an Italus Hortus study reporting ascorbic acid in lettuce microgreens, whose tables were never sighted, and the only lettuce-specific food safety study, of which only the abstract could be reached.

The full accounting

Composition moves with the growing system, and it moves a long way. The two nitrate studies here ran in Cyprus under LED in fed peat and in Portugal under winter daylight in fed soil. Same crop, different plant. That is why no mineral figure appears in the table above. The vitamin C work carries a second warning worth saying out loud, because nobody else does: in that trial the full-grown lettuce measured 34.45 milligrams per 100 grams against a USDA reference of 9.2, so the whole laboratory scale sits high. Which direction the stages run is solid. How big the number is is not. At a twenty gram serving the seedling figure lands at 13.6 per cent of the Daily Value, a good source rather than a high-in. The part you cannot get from a nutrition database. Six questions that come up at a stall or a restaurant door, what you must not say, and one answer written out in full so you can see what the other five look like.

You can say

Do not say

Never say it treats, prevents, cures, or helps with any condition. That sentence is the line between a food and a drug, and it is the same line in the United States, the United Kingdom and South Africa. Do not name magnesium either. That paper’s abstract lists it and its own results section says the difference was not significant.

3“How do I use it? I will just let it go off in the fridge.”
You can say

Never quote a shelf life you have not tested yourself, in your own packaging, in the fridge your customer actually owns. Somebody else’s six days is not a promise you can make.

4“Is it safe? I read something about sprouts.”
You can say

Built on the difference between how a sprout is grown and how a microgreen is grown, and on saying what you do rather than what cannot happen.

Do not say

Never say your product cannot be contaminated. Say what you do, not what is impossible. And do not quote European nitrate limits at people. Those were written for field and glasshouse heads, and the regulation sets no level for microgreens at all.

“Why would I buy this when a bag of salad leaves costs less?”

You can say · sample

Fair question, and it is the one I get most. Bagged salad is the same plant grown to full size and cut by a machine, which is why it is cheaper. What you are holding is the same species at two weeks. A Spanish team grew eleven lettuce varieties and measured all three stages of each one, seedling, baby leaf and full head. Both young stages carried more vitamin C than the head, and the seedling carried the most. A Portuguese team grew seedlings and heads in the same soil on the same farm and found the seedling ahead on six minerals, behind on three, and carrying about a quarter of the nitrate. So it is not a better lettuce. It is a different point on the same plant, and the difference is measured rather than claimed. The part the bag cannot match is that this was cut this morning, twenty minutes from here.

Do not say

Never say bagged salad is bad for anybody, or that this is the healthier choice. Those trials measured composition at different growth stages. Neither followed a person and neither compared a health outcome. Do not quote the vitamin C figure as an absolute either. That laboratory’s full-grown lettuce measured well above the USDA reference, so give the direction, never the number.

6“Somebody told me these have way more nutrition than a normal lettuce. How much more?”

Do not say

Never repeat a multiplier you have not traced to a table. The big figures in circulation almost always set a dried seedling against a fresh full-grown plant, and some of them belong to a different crop entirely. Never carry an old remedy across to the seedling either. Traditional use of the mature plant, the seed or the oil is not evidence about a microgreen, and nothing may state or imply this food treats, eases or helps with any condition.
