Toast with Avocado and Microgreens

This is a light lunch that is quick and easy to make if you’re heading out the door fast or lot of work in front of you. Have more time? Add a poached egg.

Ingredients

Scale
  • 1/4 medium avocado, mashed
  • 1 slice of whole-grain bread, toasted
  • 1 oz arugula microgreens
  • Pinch of flaky sea salt (such as Maldon)

Instructions

  1. Toast bread (4 minutes)
  2. Slice a whole avocado into quarters
  3. Mash one quarter on a small plate
  4. Spread avocado on toast
  5. Sprinkle with seasoning and salt
  6. Top with fresh arugula microgreens
  7. Serve and enjoy!
