- 2 tablespoons extra-virgin olive oil
- 2 tablespoons red-wine vinegar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- 15 oz can no-salt-added chickpeas, rinsed
- 1 cup diced radish
- 1 cup quartered tomatoes
- 4 oz spinach microgreens
- 1/4 cup crumbled cheddar
Instructions
- Open chickpeas, drain and rinse
- Wash microgreens and pt dry with a paper towel
- Slice tomatoes into bite-sized chunks
- Thinly slice the radish
- Stir oil, vinegar, garlic powder, salt, and pepper in a large bowl
- Add the chickpeas, radish, tomatoes, and microgreens
- Toss mixture
- Top with cheddar
- Server and enjoy!
