Cabbage microgreens, and the survey that put them first of twenty-five for vitamin C
One grower, one summer, twenty-five clamshells in a box of ice, and red cabbage came out on top for vitamin C. An Indian bench and an Egyptian growth chamber found nearly the same number. A Croatian raft found a third of it, and so did the same USDA laboratory, seven years on, from a different grower down the road. The same crop finished thirteenth of seventeen for iron, and the only people ever fed it in a trial were asked one question: would they keep eating it.
Cabbage microgreens taste like the pale inner leaf of a cabbage with the toughness left out: mild up front, a peppery finish ninety-nine tasters called middling, and the purple stems still crunch. In the survey that started this whole field, red cabbage came first of twenty-five microgreens for vitamin C. And a twenty-gram handful still counts as a good source on the lowest figure anybody has published since.

What the research measured
Figures below are from published work on cabbage microgreens themselves, not on microgreens as a category, and each one names the form the trial grew: red in every case but the survey rows that name green and savoy. Where a comparison with the full-grown head appears, it is the USDA record for the same organ, leaf against leaf, and it is labelled as a lookup rather than a trial.

Conditions. The vitamin K and vitamin C figures are red cabbage bought from Sun Grown Organics in San Diego in the summer of 2011, soil grown in an unheated greenhouse, cut between seven and fourteen days; the paper named no cultivar. The calcium and iron figures are red cabbage from Johnny’s seed on BioStrate felt under half-strength Hoagland in a Florida greenhouse, cut at thirteen days, no cultivar named. The phenolics and the second vitamin C figure are cv. ‘Red Carpet’ on perlite in a floating system in Zagreb, cut at twenty days. The thirty-variety survey, which carries the second USDA vitamin C and vitamin K figures, is Fresh Origins, peat moss, red cabbage cut at seven days and green and savoy at nine. The Egyptian figures are eight-day seedlings in a growth chamber under a 70:10:20 red, green and blue LED mix, one representative sample per treatment. Saying so is part of the figure.
What this does not show
One human trial has ever fed cabbage microgreens, for two weeks, and it measured whether people kept eating them, not what happened in their blood.
Everything in the table is what sits in the plant, not what it does in a body. The cholesterol result everybody quotes belongs to sixty mice, and the human trial that followed it measured compliance, tolerability and blood pressure and found the last one did not move. One paper that matters stays unread, so nothing from it is quoted here: the 2026 study that grew red cabbage as seedling and head under one set of conditions. The 2020 consumer panel that scored its taste has now been read, and it moved the taste card. The only words this page has for a health outcome are the ones that tell you not to promise one.
Composition moves with the growing system, and on this crop it moves further than on any other in the library. Nitrate ran from undetectable on peat with a weak feed to the highest class measured on fed felt mats. Vitamin C moved three-fold across five laboratories, and the sharpest split sits inside one of them: the USDA group that measured 147 in 2011 measured 56 from a second grower in the same area, and wrote that the difference was the farm and the handling. That is why the table carries its conditions and why no multiplier appears on this page. The 2012 paper’s vitamin E column sits far above anything a leaf has ever measured, so it is held and no vitamin E figure prints here. The rest of the accounting is in the guide.
What your customer will ask
The part you cannot get from a nutrition database. Six questions that come up at a stall or a restaurant door, what you must not say, and one answer written out in full so you can see what the other five look like.
1“Why is it so expensive for such a small bag?”
Built on the thirteen days of hand work between seed and cut, on what one tray yields, and on the cold chain a purple cotyledon needs to reach a table still crunching.
Never measure the price against a supplement, a medicine or a health outcome. Price is labour, yield and shelf life. The moment it is about what the food does for somebody, it is a drug claim wearing a price tag.
2“What is it actually good for?”
Built on the taste, on where red cabbage stood in five vitamin C panels and two calcium surveys, and on the honest sentence that it is not an iron crop.
Never say it treats, prevents, cures, eases or helps with any condition. That sentence is the line between a food and a drug. Never say “antioxidant-rich” either. Six multi-species panels measured its phenolics: three put it first, one second of four, one third of thirty and one last of four, so the word belongs to the panel, not the plant, and a test-tube assay is not a body result in any case.
3“How do I use it? It will just go off in my fridge.”

Never quote a shelf life you have not tested yourself, in your own packaging, in the fridge your customer actually owns. No cabbage microgreen storage study was read for this guide, so there is no borrowed number to fall back on, and that is stated rather than papered over.
4“Is it safe? I read something about nitrate and about sprouts.”
Built on the difference between a sprout and a microgreen, and on the fact that nitrate in this crop ran from undetectable to the highest class measured depending on what the trays were fed. So you say what you feed, not what cannot happen.
Never say your product cannot be contaminated; say what you do. Never quote a nitrate figure you did not measure in your own trays, and never quote European nitrate limits at people. Those were written for field lettuce and spinach, and the regulation sets no level for microgreens at all.
“I read these lower cholesterol. Is that true?”
You read about a real study, from 2016, and I will tell you exactly what it was. It was done on mice. Sixty of them, at a USDA laboratory in Maryland, fed a freeze-dried powder of red cabbage microgreens mixed into a high-fat chow for eight weeks. The mice on the powder measured less LDL in their blood than the mice without it. That is the whole of it. Nobody has repeated it in a person, and I am not going to pretend a mouse is you. What has been done in people is smaller and, to me, more useful. In 2025 a team in Colorado asked twenty-four adults between forty-five and seventy to eat two cups of red cabbage microgreens every day for two weeks. About thirty grams. They managed it on ninety-four days out of every hundred, and the point of the study was whether people would keep eating them. They did. So I will not tell you what this does to your cholesterol, since nobody knows. I will tell you it is a vegetable that twenty-four people ate every day for a fortnight and kept coming back for. Try a handful on your eggs tomorrow and tell me if you do the same.
Never say lowers cholesterol, LDL, inflammation, weight, blood sugar, or any condition. The mouse study is the most repeated claim about this crop, and the word mice is the part that gets dropped. Never lift the p = 0.047 gut-symptom sub-score from the human trial either: it is a questionnaire item in a feasibility study that was not built to find it, and the authors say so.
6“Somebody said these have forty times the vitamin E of a cabbage. Is that right?”
Built on the arithmetic in the 2012 paper’s own discussion, on where each comparator came from, and on the one honest multiplier that survives with its conditions attached.
Never repeat the forty-times vitamin E figure; it does not reproduce from the paper’s own table, and the tocopherol column is held here on plausibility. Never repeat 28 times for lutein or six times for vitamin C either. Each sets one grower’s seedlings against a database lookup or a literature value from a different farm, season and laboratory, and the one same-conditions comparison of seedling and head was published in September 2026 behind a paywall and has not been read. The one head-against-seedling measurement that has been read, a market head against a Fresh Origins seedling on dry weight, found nearly three times more anthocyanin in the head, so never say the seedling out-colours the cabbage either. Traditional uses of the head, the juice or the leaf are not evidence about a seedling.
