Zucchini Boats with Broccoli and Quinoa

Zucchini Boats with Broccoli and Quinoa

Vegan food that is made from baked zucchini stuffed with quinoa and vegetables.

Ingredients

  • 2 medium zucchini
  • 1/2 teaspoon ground pepper
  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup finely chopped white onion
  • 2 teaspoons finely chopped garlic
  • 1 1/2 cups diced plum tomatoes
  • 1 cup of steamed broccoli
  • 1/2 cup reduced-sodium marinara sauce
  • 1 cup cooked quinoa
  • 3 tablespoons finely grated Parmesan cheese

Instructions

  1. Cook the quinoa according to the directions
  2. Steam broccoli in for about 10 minutes until tender
  3. Preheat the oven to 350 degrees
  4. Wash and cut each zucchini in half lengthwise
  5. Use a teaspoon to remove most of the flesh
  6. Leave about a 1/2-inch-thick shell
  7. Place the zucchini shells on a baking sheet and sprinkle with pepper
  8. Bake for 10 minutes until tender
  9. Meanwhile, heat oil in a medium skillet over medium-high heat
  10. Add the broccoli, onion, and garlic
  11. Cook for 3 minutes until the onion softens
  12. Stir in tomatoes and marinara sauce
  13. Cook for 2 more minutes until the liquid evaporates
  14. Divide the mixture evenly among the zucchini shells
  15. Top evenly with qunioa and brocolli
  16. Sprinkle with Parmesan
  17. Switch oven to broil and place a rack 8 inches from the heat
  18. Broil zucchini boats for 5 minutes until the cheese is browned
  19. Serve and enjoy!
