Zucchini Boats with Broccoli and Quinoa
Vegan food that is made from baked zucchini stuffed with quinoa and vegetables.

Ingredients
- 2 medium zucchini
- 1/2 teaspoon ground pepper
- 1 tablespoon extra-virgin olive oil
- 1/2 cup finely chopped white onion
- 2 teaspoons finely chopped garlic
- 1 1/2 cups diced plum tomatoes
- 1 cup of steamed broccoli
- 1/2 cup reduced-sodium marinara sauce
- 1 cup cooked quinoa
- 3 tablespoons finely grated Parmesan cheese
Instructions
- Cook the quinoa according to the directions
- Steam broccoli in for about 10 minutes until tender
- Preheat the oven to 350 degrees
- Wash and cut each zucchini in half lengthwise
- Use a teaspoon to remove most of the flesh
- Leave about a 1/2-inch-thick shell
- Place the zucchini shells on a baking sheet and sprinkle with pepper
- Bake for 10 minutes until tender
- Meanwhile, heat oil in a medium skillet over medium-high heat
- Add the broccoli, onion, and garlic
- Cook for 3 minutes until the onion softens
- Stir in tomatoes and marinara sauce
- Cook for 2 more minutes until the liquid evaporates
- Divide the mixture evenly among the zucchini shells
- Top evenly with qunioa and brocolli
- Sprinkle with Parmesan
- Switch oven to broil and place a rack 8 inches from the heat
- Broil zucchini boats for 5 minutes until the cheese is browned
- Serve and enjoy!
