Homemade Pasta with Broccolini

Homemade Pasta with Broccolini

Sprinkle this healthy pasta dish with tangy bites of crumbled goat cheese.

Ingredients

  • 1 pack of spaghetti noodles
  • 1 tablespoon extra-virgin olive oil
  • 1 bunch broccolini, chopped
  • 4 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper (optional)
  • 2 tablespoons water
  • 1 cup shredded part-skim mozzarella cheese, divided
  • 1/4 cup shredded Parmesan cheese, divided
  • 3/4 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper

Instructions

  1. Put a large pot of water on to boil.
  2. Meanwhile, heat oil in a large skillet over medium heat
  3. Add garlic and crushed red pepper
    Cook for 2 minutes
  4. Add broccolini in 2 batches and cook
  5. Stir occasionally for about 1 minute
  6. Remove from heat and cover to keep warm
  7. Add pasta and broccolini to the boiling water
  8. Cook for 5 minutes (tender)
  9. Reserve 1 cup of the cooking water
  10. Drain and transfer the pasta and vegetables to the skillet
  11. Toss to combine.
  12. Add reserved water to the desired consistency.
  13. Toss with parsley and salt.
  14. Top with almonds and goat cheese
  15. Garnish with lemon zest.
  16. Serve and enjoy!
