Homemade Pasta with Broccolini
Sprinkle this healthy pasta dish with tangy bites of crumbled goat cheese.

Ingredients
- 1 pack of spaghetti noodles
- 1 tablespoon extra-virgin olive oil
- 1 bunch broccolini, chopped
- 4 cloves garlic, minced
- 1/4 teaspoon crushed red pepper (optional)
- 2 tablespoons water
- 1 cup shredded part-skim mozzarella cheese, divided
- 1/4 cup shredded Parmesan cheese, divided
- 3/4 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
Instructions
- Put a large pot of water on to boil.
- Meanwhile, heat oil in a large skillet over medium heat
- Add garlic and crushed red pepper
Cook for 2 minutes - Add broccolini in 2 batches and cook
- Stir occasionally for about 1 minute
- Remove from heat and cover to keep warm
- Add pasta and broccolini to the boiling water
- Cook for 5 minutes (tender)
- Reserve 1 cup of the cooking water
- Drain and transfer the pasta and vegetables to the skillet
- Toss to combine.
- Add reserved water to the desired consistency.
- Toss with parsley and salt.
- Top with almonds and goat cheese
- Garnish with lemon zest.
- Serve and enjoy!
