Ingredients
- 2 ripe peaches, pitted and sliced
- 1 cup arugula microgreens
- 1 cup unsweetened coconut milk
- 1/2 teaspoon vanilla extract
- 1 tablespoon flax seeds
- 1/2 cup of ice (optional)
Instructions
- Thoroughly wash the microgreens
- Pit and slice the peaches
- Put the peaches and arugula microgreens into a blender
- Add the coconut milk and vanilla extract
- Blend the mixture for 45 seconds
- Add flax seeds and blend for 15 seconds or until smooth.
- Pour into glasses over ice
- Serve chilled (optional)
Notes
Adjust sweetness by adding a natural sweetener if desired.
