Lemon Blueberry Chia Spinach

A tangy fusion of lemon and blueberries with the subtle earthiness of spinach microgreens. High in antioxidants and fiber, this smoothie supports digestion and provides a refreshing start to your day.

The combination of lemon, blueberries, spinach microgreens, chia seeds, and coconut water makes for an incredibly refreshing, high-fiber smoothie that supports healthy digestion. Spinach microgreens also contain very high levels of antioxidants to help fight inflammation.

Ingredients

  • 1 cup blueberries
  • 1 cup spinach microgreens
  • 1 tablespoon chia seeds
  • Juice of 1 lemon
  • 1 cup coconut water
  • 1/2 cup of ice (optional)

Instructions

  1. Thoroughly wash the blueberries, microgreens, and chia seeds
  2. Add the blueberries, spinach microgreens, and chia seeds into the blender
  3. Add the lemon juice and coconut water
  4. Blend the mixture for one minute or until smooth
  5. Pour into glasses over ice
  6. Serve chilled (optional)

Notes

Adjust sweetness by adding a natural sweetener or ice if desired.
