Chickpea Salad with Vegetables and Microgreens

Quick, easy, this chopped  Mediterranean-inspired salad makes for a healthy evening meal.

Ingredients

Units Scale
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red-wine vinegar
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 15 oz can no-salt-added chickpeas, rinsed
  • 1 cup diced radish
  • 1 cup quartered tomatoes
  • 4 oz spinach microgreens
  • 1/4 cup crumbled cheddar

Instructions

  1. Open chickpeas, drain and rinse
  2. Wash microgreens and pt dry with a paper towel
  3. Slice tomatoes into bite-sized chunks
  4. Thinly slice the radish
  5. Stir oil, vinegar, garlic powder, salt, and pepper in a large bowl
  6. Add the chickpeas, radish, tomatoes, and microgreens
  7. Toss mixture
  8. Top with cheddar
  9. Server and enjoy!
