Creamy Avocado Spinach Elixir

Indulge in the creamy goodness of avocados combined with the freshness of spinach microgreens. This smoothie is nutritious for the body, promoting heart health thanks to its healthy fats and vitamins.

Spinach microgreens contain exceptionally high levels of vitamins K and C, folate, iron, and carotenoids compared to mature spinach leaves. Blending spinach microgreens with nutrient-dense foods like avocados makes for an incredibly nutritious, plant-based smoothie.

Ingredients

  • 1 ripe avocado, pitted and peeled
  • 1 cup spinach microgreens
  • 1 cup almond milk
  • 1/2 cup frozen or fresh mango chunks
  • 1 tablespoon honey or agave syrup (optional)
  • 1/2 cup of ice (optional)

Instructions

  1. Thoroughly wash the microgreens
  2. Cut the avocado and mango into two-inch chunks (if necessary)
  3. Add the avocado, mango, and microgreens to the blender
  4. Add the almond milk
  5. Blend avocado, spinach microgreens, almond milk, and frozen mango until creamy.
  6. Add sweetener if desired and blend again.
  7. Serve chilled.

Notes

  • Adjust sweetness based on personal preference.
  • Substitute fresh cow’s milk if you prefer.
