Cilantro Microgreens, Mango, and Papaya

Experience a burst of tropical flavors with the marriage of mango, papaya, and a hint of mint paired with cilantro microgreens. This smoothie is loaded with vitamins and enzymes that will revitalize and delight your palate.

The cilantro microgreens contain very high levels of antioxidants and anti-inflammatory compounds compared to mature cilantro leaves. Combining cilantro microgreens with tropical fruits like mango and papaya results in an incredibly refreshing and nutritious smoothie.

Ingredients

  • 1 cup diced mango
  • 1 cup diced papaya
  • 1 cup cilantro microgreens
  • Juice of 1 lime
  • Fresh mint leaves for garnish
  • Ice cubes (optional)

Instructions

  1. Thoroughly wash the microgreens
  2. Peel and pit the mango. Slice into one-inch chunks
  3. Peel and pit the papaya. Slice into one-inch chunks
  4. Put the microgreens, mango, and papaya chunks into the blender
  5. Add the lime juice (ice optional)
  6. Blend the mixture for one minute or until smooth.
  7. Pour into glasses over ice or serve chilled
  8. Garnish with fresh mint leaves

Notes

Adjust consistency by adding more fruit or liquid if needed.
