Ravioli with Spinach & Tomatoes

Ravioli with Spinach, Garlic, and Tomatoes

A satisfying and healthy Italian dinner that is an easy 6-ingredient recipe loaded with fresh flavors.

Ingredients

  • 16 oz of frozen or refrigerated cheese ravioli (or gnocchi)
  • 1 tablespoon olive oil
  • 1 pint grape tomatoes
  • 5 oz baby spinach
  • 4 oz spinach microgreens
  • 4 cloves of garlic
  • 1/3 cup pesto

Instructions

  1. Bring a large pot of water to a boil.
  2. Cook ravioli according to package directions
  3. Drain and set aside
  4. Heat oil in a large nonstick skillet over medium heat.
  5. Add tomatoes and garlic
  6. Sauté until they begin to burst (about 3 to 4 minutes)
  7. Add spinach and continue to cook
  8. Stirring frequently, until spinach wilts (about 1 to 2 minutes)
  9. Mix ravioli and pesto
  10. Add to spinach and tomatoes
  11. Stir gently to combine for another 2-3 minutes
  12. Remove and place potions in dinner plates
  13. Top with spinach microgreens
  14. Serve and enjoy
