Belgian Startup Bets That Microgreens Belong in Every Kitchen, Not Just Michelin Stars

For most of the past decade, microgreens have lived in a comfortable but narrow niche sprinkled on high-end restaurant plates and stocked in specialty grocery stores that cater to health-conscious shoppers willing to pay a premium. That’s the market Cesar and Yuval Depicker knew when they started growing microgreens in Belgium in 2022. But it’s not the market they’re trying to serve anymore.

According to a profile published this week by FreshPlaza, the company’s founders have set their sights on something more ambitious: making microgreens a mainstream ingredient. Their focus spans the hospitality sector and the broader retail space, with an emphasis on building volume at accessible price points without sacrificing the quality that premium buyers expect. The message from Ghent is direct: microgreens should not be a luxury item.

The Depicker operation represents a shift playing out across the industry. As production efficiency has improved through controlled environment agriculture, more consistent yields, tighter quality control, reduced water use. The economics have started to move in favor of scale. That creates an opening for growers who can serve both the white-tablecloth customer and the regional grocery buyer from the same operation without sacrificing margins at either end.

Consumer demand is moving in the same direction. Research consistently shows that awareness of microgreens as a nutrient-dense food is rising, and market forecasts now peg global revenues at $8.56 billion by 2036. The trajectory makes the Depicker approach, accessible pricing, broader distribution, dual-channel sales, look less like a gamble and more like correctly reading where the category is heading over the next ten years.

The challenge, as always, is logistics. Microgreens are perishable, shelf-sensitive, and tricky to distribute at volume without quality degradation. Whether this Belgian operation cracks that problem at scale will be something the broader industry watches closely. For now, the message from Europe to growers everywhere is clear: the ceiling on this market is considerably higher than most people assumed, and the path there runs through mainstream shelves, not specialty ones.
